Do what Jeff suggested and check out this link.

Look at the BOTTOM of the page, black arrow.  Find that number up underneath the front end as Larry suggest.  Match the last six on the block to the last six of your VIN on the dash and you've a numbers matching car.

Yeah, you can tell this much just from what's shown in the pics...

1.  That looks to be the original color paint on the engine, looking at the patina.  That color was only used in 75-76.

2.  Emission control devices that are present were correct for the 75-76 year, particularly the EGR that doesn't have the BPT on it.

3.  Heads are clearly 6X, used only in late 75 and 76.

Beyond that, as Jeff and John suggest you need to look in those specific locations to get the casting numbers, etc.

Do you guys think that judging from the pictures is it possible to say whether the engine has ever been rebuilt?

You can't really tell on internals - it doesn't look like it's been touched recently, though. 

Two things are obvious;
The wire around the dipstick looks "aftermarket".
There's been a new water pump put on.  Perhaps someone changed the timing chain while they were down that way.

the waterpump is in fact brand new, the "aftermarket" wire around the dipstick is not really elegant but is working so far  ;), as soon as IŽll find a proper storage for the TA IŽll start working on her (I canŽt believe is taking sooo long to find a garage here in Austria  ::) ), until then I am actually using the TA as a DD (with tremendous pleasure)  ;D

That's cool - not exactly a ton of TA's running around Austria I'd bet.  The wire is fine if it does it's job for now. 

You'll find a good spot to work on it - point is you've got a rare car nobody else does and you're driving it!  That's 90% of the equation.

   actually I've spotted many Firebirds here in Austria, but all of them where 3rd and 4th gens. From 60's and 70's I've just spotted very few cars (Camaro and Mustangs), so mine is the only screaming chicken around here  ;D

What do you guys figure should be the difference in value between a matching and a non matching car?

Having the chance to look under the car I've also written down what I could possibly see in the transmission, that's the number: 864640239 and CF3 I'm not sure about the 3. Does anyone have some info concerning this codes?

Not sure about a manual trans but on an automatic, the cars partial VIN is stamped on a pad just above the pan...drivers side.
